Ingredients

- 1-2 tbsp cold water (as needed)

- 1 cup (200g) granulated sugar
- 3 large eggs
- 2/3 cup (160ml) fresh lemon juice (about 4 lemons)
- Zest of 2 lemons
- 1/2 cup (120g) unsalted butter, cut into cubes
- 1 tbsp all-purpose flour (optional, for extra thickening)
