1. Prepare the Crust:

  • Preheat your oven to 350°F (175°C).
  • In a food processor, combine the flour, sugar, and salt. Add the cold butter and pulse until the mixture resembles coarse crumbs.
  • Add the egg yolk and pulse again. Gradually add cold water, 1 tablespoon at a time, just until the dough comes together.
  • Turn the dough out onto a lightly floured surface and knead it a few times to bring it together. Form it into a disk, wrap in plastic wrap, and chill in the refrigerator for 30 minutes.
  • After chilling, roll the dough out to fit a 9-inch tart pan. Press the dough into the pan and trim any excess.
  • Place parchment paper over the crust and fill with pie weights or dried beans to prevent puffing. Bake for 15 minutes, then remove the paper and weights and bake for another 10-15 minutes until golden. Let it cool completely.

2. Prepare the Lemon Filling:

  • In a medium saucepan, whisk together the sugar, eggs, lemon juice, and lemon zest. Cook over medium heat, stirring constantly, until the mixture thickens and reaches about 170°F (77°C). If desired, add the tablespoon of flour to thicken the mixture further.
  • Remove from heat and whisk in the butter, one cube at a time, until the mixture is smooth and creamy.
  • Pour the lemon filling into the cooled crust. Smooth the top with a spatula.

3. Bake the Tart:

  • Bake the filled tart at 350°F (175°C) for 10-12 minutes, or until the filling is set and slightly golden on top.
  • Allow the tart to cool to room temperature before refrigerating for at least 2 hours to set.

4. Serve and Garnish:

  • Before serving, you can garnish the tart with a dusting of powdered sugar, fresh berries, or thin lemon slices for extra flavor and visual appeal.
