Lime Mousse Cheesecake
Ingredients:
• Crust:
o 1 1/2 cups graham cracker crumbs
o 1/4 cup granulated sugar
o 1/2 cup unsalted butter, melted
• Cheesecake Filling:
o 16 oz cream cheese (450g), softened
o 1 cup granulated sugar
o 1 teaspoon vanilla extract
o 1 cup heavy cream
o 1/2 cup freshly squeezed lime juice (about 4 limes)
o Zest of 2 limes
o 1 envelope (0.25 oz) unflavored gelatin (optional for firmer texture)
• Lime Mousse:
o 1 cup heavy cream
o 1/4 cup powdered sugar
o 1 tablespoon freshly squeezed lime juice
o Lime zest for garnish
