Directions:

1. Prepare the Crust:

o Preheat oven to 350°F (175°C).
o Mix graham cracker crumbs, granulated sugar, and melted butter.
o Press into the bottom of a springform pan and bake for 8-10 minutes.
o Let it cool completely.
2. Prepare the Cheesecake Filling:
o Beat the softened cream cheese until smooth.
o Add sugar and vanilla extract, mix well.
o Whip 1 cup of heavy cream into stiff peaks and fold into the cream cheese mixture.
o Add lime juice and zest.
o If using gelatin, dissolve in water and gently heat until fully dissolved, then fold into the mixture.

3. Assemble the Cheesecake:

o Pour the cheesecake filling over the cooled crust.
o Smooth the top and refrigerate for at least 4 hours to set.

4. Prepare the Lime Mousse:

o Whip 1 cup of heavy cream with powdered sugar into stiff peaks.
o Fold in lime juice.
o Spoon or pipe over the chilled cheesecake.

5. Garnish and Serve:

o Garnish with lime zest.
o Serve chilled and enjoy!
