Fluffy and easy mini breakfast pancakes with chocolate chips

Ingredients (for about 20 mini pancakes):
150g flour

1 tablespoon sugar

1 teaspoon baking powder

1/2 teaspoon baking soda (for extra fluffiness!)

Pinch of salt

1 egg

200ml milk (or plant-based milk)

1 teaspoon vanilla extract

2 tablespoons melted butter (plus a little extra for frying)

50–75g chocolate chips (milk or dark – or both!)
