Ingredients:
- 2 cups (400g) Mashed potatoes (leftover or freshly made)
- 1 large Egg
- 1/4 cup (30g) All-purpose flour
- 1/2 cup (100g) Shredded cheddar cheese
- 2 tablespoons (30g) Chopped chives or green onions
- Salt and black pepper to taste
- Olive oil for frying
- Optional: Breadcrumbs for coating
Instructions:
- Combine Ingredients: In a large bowl, combine mashed potatoes, egg, flour, shredded cheese, chives, salt, and pepper. Mix well until all ingredients are thoroughly combined.
- Form Patties:
- If desired, lightly coat your hands with flour to prevent sticking.
- Shape the potato mixture into 4-6 patties, about 1-inch thick.
- Optionally, dredge each patty in breadcrumbs.
- Cook Patties:
- Heat a large skillet over medium heat with about 1/4 inch of olive oil.
- Cook the potato pancakes for 3-4 minutes per side, or until golden brown and crispy.
