Ingredients:

  • 2 cups (400g) Mashed potatoes (leftover or freshly made)
  • 1 large Egg
  • 1/4 cup (30g) All-purpose flour
  • 1/2 cup (100g) Shredded cheddar cheese
  • 2 tablespoons (30g) Chopped chives or green onions
  • Salt and black pepper to taste
  • Olive oil for frying
  • Optional: Breadcrumbs for coating

Instructions:

  1. Combine Ingredients: In a large bowl, combine mashed potatoes, egg, flour, shredded cheese, chives, salt, and pepper. Mix well until all ingredients are thoroughly combined.
  2. Form Patties:
    • If desired, lightly coat your hands with flour to prevent sticking.
    • Shape the potato mixture into 4-6 patties, about 1-inch thick.
