INGREDIENTS

Biscuit Base

1 cup (100g) digestive or graham cracker crumbs

3 tbsp melted unsalted butter

1 tbsp brown sugar (optional)

Lime Mousse Cheesecake Layer

1¼ cups (280g) cream cheese, room temperature

⅓ cup (70g) granulated sugar

2 tsp lime zest

¼ cup (60ml) fresh lime juice

1 tsp vanilla extract

2 tsp powdered gelatin + 2 tbsp water (bloomed)

¾ cup (180ml) heavy whipping cream, whipped to soft peaks

Lime Jelly Drops (Optional Garnish)

¼ cup (60ml) lime juice

1 tsp sugar

1 tsp gelatin

Topping Garnish

Fresh green grapes (sliced or shaped)

Lime zest

Microgreens or edible leaves

A few drops of green syrup or puree (like kiwi-lime coulis)
