1. Crust
Mix crushed biscuits, melted butter, and sugar. Press into the base of your mold or dessert ring. Chill 15 minutes.
2. Lime Mousse Layer
Bloom gelatin in water. In a bowl, beat cream cheese, sugar, lime juice, zest, and vanilla until smooth.
Melt gelatin gently and stir into the cream cheese mix. Fold in whipped cream until fully incorporated.
Pour over chilled crust and smooth the top. Refrigerate 4–6 hours or until set.
3. Lime Jelly Drops (Optional)
Heat lime juice and sugar until warm. Stir in gelatin until dissolved. Pipe into spherical molds and refrigerate.
4. Assembly
Once mousse is set, unmold gently. Top with green grape slices, lime zest, jelly drops, and fresh microgreens. Drizzle with green syrup or coulis for finish.
