In a separate bowl, soften the green onion cream cheese. You can do this by leaving it out at room temperature for a few minutes or microwaving it for about 15-20 seconds.
Once softened, whisk in olive oil and chicken broth to create a smooth, creamy sauce. This combination will ensure the chicken stays moist and tender while adding a rich, flavorful coating to the dish.
Pour this creamy sauce evenly over the chicken, spinach, and mushrooms. Be sure the sauce covers the ingredients well, creating a luscious layer that will bake into the dish.
3. Bake the Dish Covered
Cover the 9×13-inch pan with foil, but do not seal it completely. You want to allow some air to escape while baking. Place the pan in the preheated oven and bake for 20 minutes.
The foil will trap moisture, helping to cook the chicken through and soften the spinach and mushrooms. After 20 minutes, carefully remove the foil and bake the dish uncovered for another 20-25 minutes. This will allow the chicken to brown slightly and develop a flavorful crust.
