Salt and paprika are added to taste, and the potatoes are fried in a pan until golden brown. Then, four eggs are beaten in a bowl and mixed with cherry tomatoes, green onions, and sour cream. Season the mixture with salt and pepper to taste. The potatoes are then flipped and fried for another 7 minutes. Afterward, the egg mixture is poured over the potatoes and the pan is covered. The tortilla is cooked over low heat for about 15 minutes. Then, the tortilla is flipped, sprinkled with mozzarella and parsley, and baked for a few minutes. After baking, the tortilla is ready to slice and serve. This recipe is a traditional, hearty dish that’s both filling and delicious, with a lovely blend of crispy potatoes and creamy cheese.
