Vegan Pasta e Fagioli is an Italian cozy classic dish loaded with different types of vegetables and pasta. Pasta e Fagioli comes with two words meaning pasta and white beans. White beans and pasta are used to prepare this dish. A combination of these two ingredients will give a royal and creamy texture. It is loaded with delicious flavours and proteins. Ingredients
- Olive oil 2tsp
- Red onion 1/2
- Garlic cloves 2, finely chopped
- Carrots 1/2 cup, cut into slices
- Celery Stalk 1/2cup
- Tomato paste 2tbsp
- Canned tomatoes 15oz
- Vegetable broth 3cups
- White Beans 15oz, you can use cooked or store-bought beans.
- Salt 1/2tsp
- Black pepper 1/4 tsp
- Pasta 1cup
- Dried Oregano 1/2tsp
- Dried thyme 1/2tsp
Instructions
Stovetop
- Add olive oil to a large nonstick skillet. Put it over a medium flame.
- Add the chopped garlic, onions, carrot, and celery to the heated oil.
- Simmer it for 5 minutes, or until the onion color changes.
- Next, add canned tomatoes, tomato paste, dried oregano, and dried thyme.
- Cook it until the tomatoes are soft.
- After that, add vegetable broth, white beans, salt, and black pepper.
- Mix well all ingredients.
- Now, cook it for twenty minutes.
- Meanwhile, we will prepare the pasta.
- To a large pan, add water and a pinch of salt. Heat it until it boils.
- Now, add the pasta.
- Cook it according to the instructions in the box or it becomes chewable.
- Now, add cooked pasta to the boiling soup. Toss it well.
- Sprinkle over herbs, and seasonings according to taste.
- The Pasta e Fagioli is ready. Serve with garlic bread.
Instant Pot
- Take a pan, and pour 1 tbsp olive oil. Simmer oil over medium flame.
- Next, Add the chopped garlic, onions, carrot, and celery to the warm oil.
- Simmer it for 5 minutes, or until the onion becomes tender.
- Add vegetable broth and cook it until broth is absorbed by the vegetables.
- After that, add all remaining ingredients like canned tomatoes, tomato paste, dried oregano, dried thyme,
- white beans, salt, pasta, and black pepper.
- Cover the instant pot with a cover, and cook it on high pressure for 4-5 minutes.
- Once the soup and pasta are cooked, turn off the stove.
- Shift into serving bowls.
- Serve hot and spicy Pasta e Fagioli with garlic bread.
Variations
- Instead of using white beans, you can use red kidney beans, pinto beans, and black beans.
- Add spinach, kale, or chard to make it a healthier soup.
- You can add chopped fresh parsley for garnishing. But it’s optional.
