Soft Lemon Biscuits Recipe

Preheat the oven to 180°C (350°F) and line a baking tray with baking paper.
Mix the wet ingredients:
In a large bowl, whisk together the eggs and sugar until well combined.
Add the sunflower oil, lemon zest and lemon juice, mixing until smooth.
Mix the dry ingredients:
In another bowl, sift together the flour and baking powder. Gradually add the dry mixture to the wet ingredients, stirring until just combined.
Shape the cookies:
Using a spoon, drop spoonfuls of the mixture onto the prepared baking sheet, about 2 inches apart.
Bake:

Bake in the preheated oven for 12 to 15 minutes or until the edges are lightly browned.
Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack.
Dust with powdered sugar:
Once cooled, dust the cookies with powdered sugar before serving.
Serving suggestions
Serve these cookies warm with a cup of tea or coffee.
Serve with lemon curd or a dollop of whipped cream for extra indulgence.
