For the Mashed Potato Topping:

  • 3 large russet potatoes, peeled and cubed
  • 1/2 cup butter
  • 1/2 cup sour cream
  • 1/4 cup milk (more if needed for consistency)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 4 strips cooked bacon, crumbled
  • 2 tablespoons chopped green onions (for garnish)

Step-by-Step Instructions

Step 1: Prepare the Meatloaf Layer

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish lightly with cooking spray.
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, milk, egg, onion, garlic, ketchup, Worcestershire sauce, salt, pepper, and parsley. Mix thoroughly until well incorporated.
  3. Transfer the meat mixture into the prepared baking dish. Press it down evenly to create a compact layer.
  4. Bake the meatloaf in the preheated oven for 25 minutes while preparing the mashed potatoes.

Step 2: Make the Mashed Potato Topping

  1. Place the cubed potatoes in a large pot of salted water. Bring to a boil and cook for 15–20 minutes, or until the potatoes are tender when pierced with a fork.
  2. Drain the potatoes and return them to the pot. Add the butter, sour cream, milk, garlic powder, salt, and pepper. Mash until smooth and creamy. Add more milk if needed for a soft consistency.
  3. Stir in 1/2 cup of shredded cheddar cheese, reserving the rest for topping.
