- Blend the Base:
Add the watermelon cubes, honey/sugar, lime juice, and mint (if using) into a blender. Blend until smooth and well combined. - Strain (Optional):
If you prefer a smoother texture, pour the blended mixture through a fine mesh sieve to remove any pulp. - Fill the Molds:
Pour the watermelon mixture into popsicle molds, leaving a little space at the top for expansion. - Insert Sticks:
If your mold doesn’t come with a lid and stick holder, wait about 30-45 minutes after freezing to insert wooden sticks so they stay upright. - Freeze:
Place the molds in the freezer and let the popsicles freeze for at least 4-6 hours, or until completely solid. - Unmold and Enjoy:
Run warm water over the outside of the mold to release the popsicles. Serve immediately and cool off with these refreshing treats!
