  1. Prepare the chocolate cake:
    • Preheat your oven to 350°F (175°C) and grease and flour an 8-inch round cake pan.
    • In a medium bowl, sift together the flour, baking powder, baking soda, salt, cocoa powder, and sugar.
    • In a separate bowl, whisk together the eggs, oil, and vanilla extract.
    • Add the wet ingredients to the dry ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients.
    • Stir in the boiling water, which will create a thin batter.
    • Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
    • Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  2. Make the raspberry filling:
    • In a medium saucepan, combine the raspberries, sugar, and lemon juice.
    • Cook over medium heat, stirring occasionally, until the raspberries break down and release their juices (about 5 minutes).
    • Stir in the cornstarch mixture and cook for an additional 2-3 minutes until the mixture thickens.
    • Remove from heat and let cool completely.
  3. Prepare the chocolate mousse:
    • In a heatproof bowl, melt the chocolate over a double boiler or in the microwave, stirring every 30 seconds.
    • Let the chocolate cool slightly.
    • In a separate bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
    • Gently fold the whipped cream into the melted chocolate until fully incorporated, being careful not to deflate the mousse.
  4. Assemble the cake:
    • Slice the cooled chocolate cake in half horizontally to create two layers.
    • Place the bottom layer of the cake on a serving plate. Spread the raspberry filling evenly over the top.
    • Top with the second layer of cake.
    • Carefully spread the chocolate mousse over the top and sides of the cake, smoothing it into an even layer.
  5. Chill and serve:
    • Refrigerate the cake for at least 2 hours to allow the mousse to set.
    • Before serving, garnish with fresh raspberries and a dusting of cocoa powder or chocolate shavings.
