- Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans or line with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
- Divide the batter evenly between the prepared cake pans and smooth the tops.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
2. Prepare the Banana Layer:
- Mash the ripe bananas in a small bowl and mix with the lemon juice to prevent browning.
- Set aside.
3. Prepare the Strawberry Layer:
- Chop the fresh strawberries and mix them with the sugar (if using) in a bowl. Let them sit for about 10-15 minutes to release their juices. Drain any excess liquid.
4. Prepare the Whipped Cream:
- In a large mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Be careful not to overbeat.
5. Prepare the Chocolate Ganache:
- Place the chopped chocolate in a heatproof bowl.
- In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer.
- Pour the hot cream over the chopped chocolate and let it sit for 1-2 minutes to soften.
- Stir the mixture until smooth and glossy. Let it cool slightly before using.
6. Assemble the Cake:
- Place the first layer of cake on a serving platter or cake stand.
- Spread the mashed banana mixture evenly over the top of the cake.
- Layer the chopped strawberries on top of the banana layer.
- Add a layer of whipped cream over the strawberries.
- Place the second cake layer on top and press gently to secure.
- Pour the chocolate ganache over the top, allowing it to drip down the sides. You can spread it with a spatula to cover the top evenly.
- Decorate the cake with additional whipped cream, strawberry slices, chocolate shavings, and crushed nuts if desired.
7. Serve and Enjoy:
- Slice into your Strawberry Split Cake and enjoy the delightful combination of fresh fruit, creamy layers, and rich chocolate ganache—a perfect treat for any occasion!
This cake is a great summer dessert or an ideal way to celebrate a special occasion. Would you like to add any other fruits or maybe a caramel drizzle to make it even more indulgent?
