- Make the chocolate cake layers:
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
- In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the eggs, milk, oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2-3 minutes until smooth.
- Gradually add the boiling water (or hot coffee), mixing until smooth. The batter will be thin, which is normal.
- Pour the batter evenly into the prepared cake pans.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
- Make the creamy filling:
- In a large mixing bowl, whip the heavy whipping cream, powdered sugar, and vanilla extract together until stiff peaks form.
- In another bowl, beat the softened cream cheese and powdered sugar until smooth.
- Gently fold the whipped cream into the cream cheese mixture until combined. This will create a light, creamy filling for the cake layers.
- Make the chocolate ganache:
- In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.
- Remove from heat and add the chopped chocolate. Stir until the chocolate is completely melted and smooth.
- If you want a shinier ganache, add the butter and stir until fully incorporated.
- Let the ganache cool slightly before using.
- Assemble the cake:
- Once the cakes are completely cool, slice each layer in half horizontally to create four layers (optional but makes for a stunning effect).
- Place the first layer on a serving plate. Spread a generous layer of the creamy filling on top.
- Add the second layer of cake and repeat with the creamy filling.
- Continue layering until all four layers are stacked, finishing with the last layer of cake on top.
- Pour the chocolate ganache over the top of the cake, letting it drip down the sides for a dramatic effect.
- Decorate (optional):
- Optionally, garnish with chocolate shavings, chopped nuts, or fresh berries to add a pop of color and texture.
Allow the cake to set for about 20-30 minutes so the ganache firms up before slicing. Serve this indulgent Layered Chocolate Delight Cake and watch everyone’s eyes light up! 🍫🎂
