Decadent Chocolate Peanut Butter Layer Cake

  1. Make the chocolate cake:
    • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
    • In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
    • Add the eggs, milk, oil, and vanilla extract to the dry ingredients. Beat on medium speed for about 2 minutes until smooth.
    • Gradually add the boiling water (or hot coffee) to the batter, mixing until smooth. The batter will be thin.

    • Gradually add the powdered sugar, one cup at a time, mixing well between additions.
    • Add the milk, vanilla extract, and a pinch of salt. Mix until smooth and fluffy, adjusting the milk to reach your desired consistency.
  3. Make the chocolate ganache (optional):
    • In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.
    • Remove from heat and add the chopped chocolate. Stir until the chocolate is completely melted and smooth.
    • If desired, add the butter and stir until the ganache is glossy and shiny.
    • Let it cool slightly before using.
  4. Assemble the cake:
    • Once the cakes are completely cool, slice each cake layer in half horizontally to create four layers (optional, for extra decadence).
    • Place the first layer of cake on a serving plate. Spread a generous layer of peanut butter frosting on top.
    • Add the second cake layer and repeat with more frosting.
    • Continue layering with the remaining cake layers, finishing with the last layer of cake on top.
    • Frost the entire cake with the remaining peanut butter frosting.
  5. Top with chocolate ganache (optional):
    • Pour the chocolate ganache over the top of the cake, allowing it to drip down the sides for a dramatic effect.
    • Optionally, sprinkle chopped peanuts or chocolate shavings on top for added texture and flavor.
