Chocolate Fudge Cake

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
  2. In a large mixing bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, beat the eggs and granulated sugar until smooth and creamy.
  4. Add the buttermilk, vegetable oil, and vanilla extract to the wet ingredients, mixing until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until smooth.
  6. Stir in the boiling water. The batter will be thin, but that’s okay—it will create a super moist, fudgy cake.
  7. Pour the batter evenly into the prepared cake pans.
  8. Bake for 30–35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  9. Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

2. Prepare the Fudge Frosting:

  1. In a medium bowl, beat the softened butter until creamy.
  2. Gradually add the powdered sugar and cocoa powder, mixing until smooth.
  3. Add the vanilla extract, heavy cream, and a pinch of salt. Beat until fluffy, adding more cream if needed to reach the desired consistency.
  4. Continue beating for an additional 2-3 minutes until the frosting is light and smooth.

3. Assemble the Cake:

  1. Once the cakes are completely cooled, place one cake layer on a serving plate.
  2. Spread a generous layer of fudge frosting on top of the first layer.
  3. Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.
