- Prepare the chocolate cake:
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans (or line with parchment paper for easy removal).
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
- In a separate bowl, beat the eggs with the milk, vegetable oil, and vanilla extract until smooth.
- Gradually add the wet ingredients into the dry ingredients, mixing until just combined. The batter will be thick at this point.
- Slowly add the boiling water, mixing until smooth. The batter will become thinner, but that’s normal.
- If you’re using sour cream or buttermilk, fold it into the batter now for extra moistness.
- Divide the batter evenly between the prepared cake pans.
- Bake the cake:
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Let the cakes cool in the pans for about 10 minutes, then transfer them to a wire rack to cool completely.
- Make the chocolate ganache:
- Place the chopped chocolate in a heatproof bowl.
- In a saucepan, heat the heavy cream over medium heat until it just begins to simmer (don’t let it boil).
- Pour the hot cream over the chopped chocolate and let it sit for 1-2 minutes to melt the chocolate.
- Stir until smooth and glossy. If you’d like a shinier ganache, you can add 1 tbsp of butter and stir until fully incorporated.
- Assemble the cake:
- Once the cakes are completely cooled, place one layer on a serving plate or cake stand.
- Spread a layer of ganache over the top of the first cake, smoothing it evenly.
- Place the second cake layer on top and pour the remaining ganache over the top, allowing it to drizzle down the sides.
- Serve and enjoy:
- Let the ganache set for about 20 minutes to firm up, then slice and serve.
- You can garnish with chocolate shavings, sprinkles, or berries for extra flair.
Tips:
- For a richer chocolate flavor, you can use dark chocolate for the ganache.
- To make it even more indulgent, add a layer of chocolate frosting between the cake layers.
- You can also chill the cake in the fridge for a firmer ganache finish.
