  1. Prepare the chocolate cake:
    • Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans (or line with parchment paper for easy removal).
    • In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
    • In a separate bowl, beat the eggs with the milk, vegetable oil, and vanilla extract until smooth.
    • Gradually add the wet ingredients into the dry ingredients, mixing until just combined. The batter will be thick at this point.
    • Slowly add the boiling water, mixing until smooth. The batter will become thinner, but that’s normal.
    • If you’re using sour cream or buttermilk, fold it into the batter now for extra moistness.
    • Divide the batter evenly between the prepared cake pans.
  2. Bake the cake:
    • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
    • Let the cakes cool in the pans for about 10 minutes, then transfer them to a wire rack to cool completely.
  3. Make the chocolate ganache:
    • Place the chopped chocolate in a heatproof bowl.
    • In a saucepan, heat the heavy cream over medium heat until it just begins to simmer (don’t let it boil).
    • Pour the hot cream over the chopped chocolate and let it sit for 1-2 minutes to melt the chocolate.
    • Stir until smooth and glossy. If you’d like a shinier ganache, you can add 1 tbsp of butter and stir until fully incorporated.
  4. Assemble the cake:
    • Once the cakes are completely cooled, place one layer on a serving plate or cake stand.
    • Spread a layer of ganache over the top of the first cake, smoothing it evenly.
    • Place the second cake layer on top and pour the remaining ganache over the top, allowing it to drizzle down the sides.
  5. Serve and enjoy:
    • Let the ganache set for about 20 minutes to firm up, then slice and serve.
    • You can garnish with chocolate shavings, sprinkles, or berries for extra flair.

Tips:

  • For a richer chocolate flavor, you can use dark chocolate for the ganache.
  • To make it even more indulgent, add a layer of chocolate frosting between the cake layers.
  • You can also chill the cake in the fridge for a firmer ganache finish.
