  1. Prepare the Cake:
    • Preheat your oven to 350°F (175°C). Line a 10×15-inch baking sheet with parchment paper and grease the edges.
    • In a large bowl, beat the eggs and granulated sugar with an electric mixer on high speed until thick, pale, and fluffy (about 5 minutes).
    • Sift the cocoa powder, flour, baking powder, and salt together. Gradually fold the dry ingredients into the egg mixture, being careful not to deflate the batter.
    • Add the melted butter and vanilla extract, mixing gently until incorporated.
    • Pour the batter into the prepared baking sheet, spreading it evenly. Bake for 12-15 minutes, or until the cake springs back when lightly touched.
    • While the cake is baking, lay a clean kitchen towel on a flat surface and sprinkle it generously with powdered sugar.
    • Once the cake is baked, remove it from the oven and immediately invert it onto the prepared towel. Carefully peel off the parchment paper.
    • Starting from one edge, gently roll the cake up with the towel. Let it cool completely while rolled up, allowing it to set its shape.
  2. Make the Chocolate Buttercream:
    • In a large bowl, beat the softened butter until smooth and creamy.
    • Gradually add the powdered sugar and cocoa powder, mixing on low speed to prevent a mess. Once combined, add the vanilla extract, heavy cream, and a pinch of salt. Beat on medium-high speed until light and fluffy, about 3-4 minutes.
  3. Assemble the Yule Log:
    • Once the cake has cooled, unroll it gently and spread a layer of chocolate buttercream over the inside of the cake, leaving about ½ inch around the edges.
    • Carefully re-roll the cake without the towel. Transfer the cake to a serving platter.
    • Use a serrated knife to trim a small piece off one end of the roll (this will be used to create the branch on the log).
    • Position the cut piece on the side of the roll, attaching it with a bit of buttercream to form a “branch.”
  4. Decorate the Yule Log:
    • Spread a thin layer of chocolate buttercream over the entire rolled cake, including the branch.
    • Use a fork or a decorating comb to create a bark-like texture on the surface of the cake.
    • Dust the entire cake with powdered sugar to create a “snowy” effect.
    • Decorate with meringue mushrooms, berries, or holly leaves for a festive touch.
  5. Serve:
    • Chill the Yule Log for about 30 minutes before slicing and serving to allow the buttercream to set. Slice carefully, and enjoy the delicious layers!

Pro Tips:

  • Rolling the Cake: When rolling the cake, do it while it’s still warm to prevent cracking. Rolling it up with the towel while it cools helps maintain the roll shape.
  • Buttercream Texture: If your buttercream is too thick, add a little more heavy cream until you reach a smooth, spreadable consistency.
  • Decoration Ideas: You can add additional decorations like mini edible stars, sugared cranberries, or even a small figurine to make your Yule Log extra magical!

This Yule Log Cake is a festive and indulgent dessert that will wow your guests with its beauty and flavor. The rich chocolate cake, smooth buttercream, and charming decorations make it the perfect holiday treat. Would you like to try creating your own custom decorations for it? 🍰🎄
