Tuxedo Cake with Chocolate & Vanilla Mousse

  1. Prepare the Cakes:
    • Bake both the chocolate and vanilla cake layers according to the box instructions, or follow your preferred recipes. Once baked, let the cakes cool completely before assembling.
  2. Prepare the Brownie Layer:
    • Make the brownies and bake according to the recipe or package instructions. Once baked and cooled, cut into small chunks that will fit between the cake layers. You can also melt some chocolate chips into the brownie mix to make them extra rich if you like.
  3. Make the Chocolate Mousse:
    • In a small saucepan, heat 1 cup of heavy cream over medium heat until it’s almost boiling. Pour it over the chopped chocolate and let it sit for 1 minute. Stir until the chocolate is fully melted and the mixture is smooth.
    • Allow the mixture to cool to room temperature, then beat it in the fridge until it thickens (about 1-2 hours). Once thickened, fold it to achieve a mousse-like consistency.
  4. Make the Vanilla Mousse:
    • Whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form. Be careful not to overwhip. Gently fold it until smooth.
  5. Make the Ganache:
    • Heat 1 cup of heavy cream until it begins to simmer. Pour over chopped chocolate and stir until smooth. Let it cool slightly before using it to top the cake.
  6. Assemble the Cake:
    • Start by placing the chocolate cake layer on the bottom of your cake stand or plate.
    • Spread a layer of chocolate mousse on top of the cake.
    • Add a layer of brownie chunks.
    • Place the vanilla cake layer on top, followed by a layer of vanilla mousse.
    • Repeat the process to create more layers, finishing with a chocolate cake layer on top.
  7. Finish with Ganache:
    • Pour the cooled ganache over the top of the cake, letting it drip down the sides. Smooth out the top with a spatula if necessary.
  8. Decorate:
    • Garnish the cake with chocolate shavings or curls and extra brownie chunks on top.
  9. Chill:
    • Let the cake chill in the refrigerator for a few hours before serving to allow the layers to set.
