  • Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or two 8-inch pans if you want a layered cake.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  • In a large bowl, cream together the softened butter and sugar until light and fluffy, about 3 minutes.
  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  • Gradually mix in the flour mixture, alternating with the buttermilk. Start and end with the flour mixture, mixing until just combined.
  • Add the mango puree, strawberry puree, and rum (if using). Stir until the batter is smooth and evenly mixed.

2. Bake the Cake:

  • Pour the batter into the prepared cake pan(s) and smooth the top.
  • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

3. Prepare the Strawberry Mango Syrup:

  • In a small saucepan, combine the mango juice, strawberry puree, sugar, and rum (if using).
  • Heat over medium heat, stirring occasionally, until the mixture comes to a simmer and the sugar dissolves. Let it simmer for 2-3 minutes to thicken slightly.
  • Remove from heat and allow the syrup to cool.

4. Make the Whipped Cream Frosting:

  • In a large bowl, beat the heavy whipping cream with powdered sugar and vanilla extract until stiff peaks form.
  • If you’d like an extra tropical kick, add the rum and beat it in gently.

5. Assemble the Cake:

  • Once the cake is completely cool, slice it in half horizontally if using one layer, or simply layer the two cakes if using two.
  • Brush each layer with the strawberry mango syrup, letting the syrup soak in to make the cake extra moist and flavorful.
  • Spread a layer of whipped cream frosting over the bottom layer of the cake.
  • Place the second layer of cake on top and frost the entire cake with the whipped cream.

6. Garnish and Serve:

  • Decorate the top of the cake with fresh strawberry and mango slices.
  • Garnish with mint leaves for a fresh pop of green if desired.
  • Serve and enjoy!
