  1. Prepare the rice:
    • In a medium saucepan, bring the chicken broth to a boil. Add the Arborio rice and cook according to package instructions, typically about 18-20 minutes, until the rice is tender and all the liquid has been absorbed.
    • Once cooked, remove the rice from heat and stir in the butter, Parmesan cheese, and a pinch of salt and pepper. Let the rice cool to room temperature (you can spread it out on a baking sheet to speed up the cooling process).
  2. Prepare the filling:
    • While the rice is cooling, prepare the filling by dicing the ham and mozzarella cheese into small cubes. Set aside.
    • In a small bowl, mix the peas with the ham and mozzarella.
  3. Shape the arancini:
    • Once the rice has cooled, beat the egg in a separate bowl and add it to the rice, mixing it thoroughly to combine.
    • Take a small portion of the rice (about 2 tbsp) and flatten it slightly in your hand.
    • Place a teaspoon of the ham, mozzarella, and peas mixture in the center of the rice. Carefully fold the rice around the filling and mold it into a ball. Repeat with the remaining rice and filling.
  4. Bread the arancini:
    • Set up a breading station with three bowls: one with flour, one with the beaten eggs, and one with breadcrumbs.
    • Dredge each arancini ball in the flour, then dip it in the beaten egg, and finally coat it evenly with the breadcrumbs. Repeat for all the rice balls.
  5. Fry the arancini:
    • Heat about 2 inches of vegetable oil in a large skillet or deep fryer over medium-high heat. The oil is ready when a small piece of bread dropped into it turns golden brown in about 30 seconds.
    • Fry the arancini in batches, making sure not to overcrowd the pan. Cook for 3-4 minutes, or until golden brown and crispy on all sides.
    • Use a slotted spoon to remove the arancini from the oil and place them on a paper towel-lined plate to drain excess oil.
  6. Serve:
    • Serve the arancini hot, garnished with fresh herbs or a sprinkle of Parmesan, if desired.
    • You can enjoy them as they are or pair them with a simple marinara sauce for dipping.

These Sicilian Arancini with Ham, Mozzarella, and Peas are the perfect combination of crunchy and gooey, with savory, cheesy filling and a crisp exterior. They’re sure to impress at any gathering! Would you like to serve them with a dipping sauce, or keep them simple for maximum flavor?
