  1. Prepare the cake:
    • Preheat your oven to 350°F (175°C) and line a jelly roll pan (or similar) with parchment paper. Grease and dust with flour.
    • In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
    • In a large bowl, beat the eggs and sugar until light and fluffy. Add the vanilla extract and purple food coloring, mixing until well combined.
    • Alternate adding the dry ingredients and milk to the egg mixture, starting and ending with the dry ingredients. Mix in the vegetable oil.
    • Pour the batter into the prepared pan, spreading it evenly.
    • Bake for 12–15 minutes or until the cake springs back when touched gently.
    • While it bakes, lay a clean kitchen towel on your counter and dust with powdered sugar. Once the cake is done, immediately invert it onto the towel. Carefully peel off the parchment paper, then roll the cake up with the towel, and let it cool completely.
  2. Make the cream cheese filling:
    • Beat together softened cream cheese, butter, powdered sugar, vanilla, and a pinch of salt until smooth and fluffy.
  3. Assemble the roll:
    • Once the cake has cooled, carefully unroll it and spread the cream cheese filling evenly over the surface.
    • Roll the cake back up, this time without the towel.
    • Optionally, dust the top with powdered sugar or add a drizzle of white chocolate ganache for an extra elegant touch.
  4. Serve & Enjoy:
    • Slice the cake into thick, creamy rolls. The rich purple hue will pop beautifully against the creamy filling.
