No-Bake Funfetti Oreo Icebox Cake

  1. Prep the Cream Layer:
    • In a mixing bowl, beat the cream cheese and powdered sugar until smooth.
    • Add 1/2 cup of the dry Funfetti cake mix and mix until combined.
    • In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
  2. Assemble the Layers:
    • Quickly dip each Golden Oreo into milk (don’t soak them, just enough to soften).
    • Layer the Oreos at the bottom of a 9×9 pan or dish.
    • Spread a layer of the Funfetti cream mixture on top of the Oreos.
    • Repeat the layers until you run out of ingredients (3-4 layers total).
  3. Top It Off:
    • On the final layer, spread the remaining cream and top with sprinkles (the more, the merrier!).
  4. Chill:
    • Cover the dish and refrigerate for at least 4-6 hours (overnight is even better) so the cookies soften into a cake-like texture.
  5. Serve:
    • Slice it up and serve cold. Enjoy the ooey-gooey, no-bake goodness!
