- Prepare the crust:
- In a medium bowl, combine the crushed digestive biscuits (or graham crackers) with cocoa powder, sugar (if using), and melted butter. Mix until everything is well combined.
- Press the mixture firmly into the base of a springform pan or a pie dish, ensuring an even layer. Use the back of a spoon to press it down tightly.
- Place the crust in the fridge to chill while you prepare the filling (at least 30 minutes).
- Make the chocolate layer:
- In a heatproof bowl, melt the dark chocolate with heavy cream. You can do this over a double boiler or in the microwave in short bursts, stirring in between.
- Once the chocolate is fully melted and combined with the cream, add the vanilla extract and honey/maple syrup (if using). Stir to combine.
- Pour the melted chocolate over the chilled crust, spreading it into an even layer. Return the pan to the fridge to set while you prepare the orange mousse layer (about 30 minutes).
- Make the orange mousse layer:
- In a mixing bowl, beat the heavy cream until soft peaks form.
- In another bowl, whisk together the mascarpone cheese, orange juice, orange zest, and powdered sugar until smooth.
- Gently fold the whipped cream into the mascarpone mixture until fully combined.
- Spread the orange mousse layer over the set chocolate layer, smoothing it into an even layer.
- Chill the cake:
- Place the cake in the fridge and chill for at least 4 hours, or preferably overnight, to allow the layers to firm up and set.
- Serve:
- Once set, remove the cake from the fridge and carefully release it from the springform pan.
- Optionally, garnish with extra orange zest or slices of orange for a vibrant finish.
