- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a medium bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.
- In a large bowl, beat together the granulated sugar, brown sugar, eggs, milk, oil, and vanilla extract until smooth.
- Gradually add the dry ingredients into the wet ingredients, mixing until just combined.
- Stir in the hot brewed coffee. The batter will be thin, but that’s okay!
- Pour the batter evenly into the prepared cake pans.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then remove from the pans and let them cool completely on a wire rack.
2. Make the Mocha Buttercream Frosting:
- In a large bowl, beat the softened butter until creamy and smooth.
- Add the powdered sugar, cocoa powder, and salt, and mix until combined.
- Add the brewed coffee, vanilla extract, and 2 tbsp of heavy cream. Beat on medium-high until fluffy and smooth. If the frosting is too thick, add more heavy cream, 1 tablespoon at a time, until you reach your desired consistency.
3. Make the Chocolate Ganache (Optional):
- In a small saucepan, heat the heavy cream over low heat until it begins to simmer.
- Pour the hot cream over the chocolate chips in a bowl. Let it sit for 2 minutes, then stir until smooth and shiny.
- Let the ganache cool slightly before drizzling over the frosted cake.
4. Assemble the Cake:
- Once the cakes have cooled, place the first layer on a cake stand or serving plate.
- Spread a layer of mocha buttercream on top of the first cake layer.
- Place the second cake layer on top and frost the top and sides with the mocha buttercream.
- If using ganache, drizzle it over the top of the cake for a beautiful finish.
- Garnish with chocolate shavings, coffee beans, or a dusting of cocoa powder for an extra touch.
