- Preheat the oven to 350°F (175°C). Grease and line a 10×15-inch jelly roll pan with parchment paper.
- In a small bowl, sift together the flour, cocoa powder, baking powder, and salt.
- In a separate large bowl, whisk the eggs and sugar together with an electric mixer until light, fluffy, and doubled in volume (about 5-7 minutes).
- Add the vanilla extract and warm water to the egg mixture, then gently fold in the dry ingredients until just combined. The batter should remain light and airy.
- Pour the batter into the prepared pan, spreading it evenly with a spatula.
- Bake for 12-15 minutes, or until the cake springs back when touched and a toothpick inserted in the center comes out clean.
- While the cake is baking, dust a clean kitchen towel with powdered sugar.
- As soon as the cake is done, remove it from the oven and immediately turn it out onto the prepared towel. Carefully peel off the parchment paper and roll the cake up tightly with the towel. Allow it to cool completely while rolled up in the towel.
2. Make the Cherry Filling:
- In a small saucepan, combine the cherries, sugar, and lemon juice. Cook over medium heat for 5-7 minutes, stirring occasionally, until the cherries release their juices and soften.
- For a thicker cherry sauce, mix 1 tbsp of cornstarch with 2 tbsp of water and stir it into the cherry mixture. Cook for another 2 minutes, until thickened further.
- Remove from heat and let it cool.
3. Make the Whipped Cream:
- In a chilled mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract together until stiff peaks form. Be careful not to overbeat.
4. Assemble the Roll Cake:
- Once the chocolate sponge cake has completely cooled, carefully unroll it from the towel.
- Spread a thin layer of whipped cream evenly over the cake, leaving about 1 inch from the edges.
- Spoon the cooled cherry filling over the whipped cream.
- Carefully roll the cake back up, starting from the short end, making sure the filling stays inside.
- Once rolled, place the cake seam side down on a serving platter.
5. Garnish & Serve:
- Frost the outside of the roll with the remaining whipped cream.
- Garnish with chocolate shavings, curls, or extra cherries on top.
