Reese’s Butterfinger Cheesecake Bars

  • Preheat your oven to 325°F (160°C). Line a 9×13 inch baking dish with parchment paper, leaving some overhang to make it easier to lift the bars later.
  • In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter until combined.
  • Press this mixture into the bottom of the prepared baking dish, creating a firm and even crust.
  • Bake for 8-10 minutes, then remove from the oven and let it cool while you prepare the cheesecake filling.

2. Prepare the Cheesecake Filling:

  • In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy (about 2-3 minutes).
  • Add in the sugar and vanilla extract, then beat until fully combined.
  • Add the eggs one at a time, mixing well after each addition. Scrape the sides of the bowl as needed.
  • Add the sour cream, peanut butter, and heavy cream, then mix until smooth and creamy.
  • Fold in the chopped Reese’s Peanut Butter Cups and Butterfinger candy pieces gently.

3. Bake the Cheesecake:

  • Pour the cheesecake batter over the cooled crust and spread it into an even layer.
  • Bake for 45-50 minutes, or until the center is set (it may still jiggle slightly). If the edges start to brown too quickly, cover the pan with aluminum foil.
  • Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour to prevent cracking.

4. Add the Toppings:

  • Once the cheesecake has cooled to room temperature, chill it in the fridge for at least 4 hours (overnight is best!).
  • Before serving, top the cheesecake with chopped Reese’s, Butterfinger pieces, and optional chocolate chips.
  • For extra peanut butter flavor, warm up the peanut butter in the microwave for 15-20 seconds and drizzle it over the top.

5. Slice and Serve:

  • Use the parchment paper to lift the cheesecake bars out of the pan and place them on a cutting board.

  • If you want to get even more decadent, you can add a layer of melted chocolate on top of the cheesecake before adding the toppings.
