  • Preheat your oven to 325°F (163°C).
  • In a medium bowl, mix together the chocolate cookie crumbs, sugar, and melted butter until well combined.

  • Repeat this process with each color (yellow, green, blue, purple) until all the colors are layered in the pan.

6. Bake the Cheesecake:

  • Bake the cheesecake for 55–65 minutes, or until the center is mostly set (it should still jiggle slightly when shaken).
  • Turn off the oven and let the cheesecake cool in the oven with the door slightly open for about 1 hour. This helps prevent cracking.
  • Once cooled, transfer the cheesecake to the refrigerator and chill for at least 4 hours or overnight to set.

7. Serve:

  • Once the cheesecake is fully set and chilled, remove it from the springform pan and transfer it to a serving plate.
  • You can top the cheesecake with extra chocolate shavings, whipped cream, or even fresh fruit to enhance the rainbow effect.
