Moist Brigadeiro Ice Cream Cake

  1. Make the Brigadeiro:
    • In a saucepan, combine the condensed milk, cocoa powder, butter, and salt over medium heat. Stir constantly until the mixture thickens and starts to pull away from the sides of the pan (about 10-12 minutes).
    • Remove from heat and let it cool for a bit, then roll the mixture into small truffles and coat them in chocolate sprinkles.
  2. Layer the Cake:
    • Place a layer of sponge cake or graham cracker crust at the bottom of your cake pan.
    • Add a layer of ice cream, smoothing it out with a spatula.
    • Drop spoonfuls of the brigadeiro truffles in between the ice cream layers.
    • Add another layer of whipped cream and drizzle with chocolate sauce for extra richness.
    • Freeze the cake for several hours, or until fully set.
  3. Serve:
    • Once it’s fully frozen and the layers are solid, slice and serve this indulgent treat!
