1. Prepare the Cake:

  • Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan, or line it with parchment paper for easy removal.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cocoa powder.
  • In a large bowl, cream the softened butter and sugar together until light and fluffy, about 2-3 minutes.
  • Add the eggs one at a time, mixing well after each addition, and then stir in the vanilla extract.
  • In a small saucepan, melt the German chocolate over low heat with the boiling water, stirring until smooth. Let it cool slightly before adding to the batter.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the dry ingredients.
  • Stir in the chopped pecans.
  • Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  • Bake for 50-60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

2. Prepare the Coconut-Pecan Frosting:

  • In a medium saucepan, melt the butter over medium heat.
  • Stir in the sugar, evaporated milk, and egg yolks, and cook, whisking constantly, until the mixture thickens and begins to bubble (about 7-10 minutes). Be careful not to let it boil over.
  • Once thickened, remove from heat and stir in the vanilla extract, shredded coconut, and chopped pecans.
  • Let the frosting cool to room temperature, as it will thicken further.

3. Assemble the Cake:

  • Once the loaf cake has cooled completely, spread the coconut-pecan frosting generously over the top of the cake.
  • Allow the frosting to set for a few minutes before slicing and serving.

Tips:

  • Cake Texture: Be sure not to overmix the batter to keep the cake light and moist.
  • Storage: Store the cake in an airtight container at room temperature for up to 3 days. You can also refrigerate it for up to a week.
  • Make Ahead: The frosting can be made ahead and refrigerated. Just let it come to room temperature before spreading it on the cake.

This German Chocolate Pecan Loaf Cake is a rich, indulgent dessert that combines chocolate, coconut, and pecans in a wonderfully moist loaf. Perfect for special occasions or whenever you’re craving a treat! 🍫🥥
