  • Separate the egg whites from the yolks, ensuring no yolk mixes into the whites.
  • In a medium bowl, whisk the egg yolks, milk, and vanilla extract until smooth.
  • Sift in the flour and baking powder, then mix until no lumps remain. Set aside.

2. Make the Meringue:

  • In a clean, dry bowl, beat the egg whites with a hand mixer on medium speed until foamy.
  • Add the cream of tartar (optional) and a pinch of salt, then gradually add the sugar, 1 tablespoon at a time.
  • Continue beating on high speed until stiff, glossy peaks form (about 3–4 minutes).

3. Combine the Batter:

  • Gently fold 1/3 of the meringue into the yolk mixture using a spatula. This lightens the batter.
  • Add the remaining meringue in two batches, folding gently each time to avoid deflating the mixture. The batter should be light and airy.

4. Cook the Pancakes:

  • Heat a large, nonstick skillet over the lowest heat setting. Lightly grease it with a small amount of oil or butter, then wipe off the excess with a paper towel.
  • Using a spoon or piping bag, scoop the batter into tall mounds on the skillet. Add more batter on top of each mound to build height.
  • Cover the skillet with a lid and cook for 5–6 minutes, checking occasionally to ensure the heat is low and the pancakes don’t burn.
  • After 5–6 minutes, carefully flip each pancake using a spatula and tongs, being gentle to preserve the fluffiness.
  • Cover again and cook the other side for another 5–6 minutes until cooked through.

5. Serve Immediately:

  • Once cooked, remove the pancakes from the skillet and serve immediately while warm.
  • Top with maple syrup, whipped cream, fresh fruit, or powdered sugar for an indulgent treat.

Tips for Success:

  1. Use Room Temperature Eggs: This ensures a stable meringue.
  2. Low and Slow Cooking: Cooking on low heat prevents the pancakes from burning before they cook through.
  3. Lid is Key: The lid traps steam, helping the pancakes cook evenly and rise beautifully.
  4. Don’t Rush the Flip: Ensure the pancakes are set on the bottom before flipping them gently.

These Fluffy Japanese Pancakes are a cloud-like dream! Their soft texture and slight sweetness make them a perfect treat to wow your family and friends. Are you planning to enjoy them as a breakfast delight or dessert indulgence? 😊
