Ingredients:

For the Chocolate Cookie Dough:

  • 1 1/2 cups (180g) all-purpose flour
  • 1/3 cup (40g) cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 1/4 cup (50g) packed brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 cup (60ml) sour cream (for a soft texture)
  • 1/2 cup (90g) mini chocolate chips (optional)

For the Cheesecake Filling:

  • 8 oz (225g) cream cheese, softened
  • 1/4 cup (50g) granulated sugar
  • 1/4 cup (60g) sour cream
  • 1 tsp vanilla extract
  • 1/3 cup (50g) freeze-dried strawberries, crushed into a powder (or fresh strawberries finely chopped)
  • 1/4 cup (40g) white chocolate chips (optional for added texture)

For the Topping:

  • Fresh strawberries (sliced)
  • Additional mini chocolate chips or white chocolate drizzle (optional)

Instructions:

1. Prepare the Chocolate Cookie Dough:

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
  4. Add the egg and vanilla extract, beating until well combined. Then mix in the sour cream until smooth.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the mini chocolate chips if using.
  7. Use a cookie scoop or spoon to scoop out about 1.5 tablespoons of dough per cookie. Roll them into balls and place them on the prepared baking sheets, spacing them about 2 inches apart.
  8. Gently flatten each cookie dough ball with your hand or the back of a spoon.

2. Prepare the Cheesecake Filling:

  1. In a medium bowl, beat the cream cheese, sugar, sour cream, and vanilla extract until smooth and creamy.
  2. Stir in the freeze-dried strawberry powder (or finely chopped fresh strawberries) and white chocolate chips if using. Mix until well incorporated.

3. Assemble the Cookies:

  1. Once the chocolate cookie dough is prepped and flattened, use your thumb or the back of a spoon to create a small indentation in the center of each cookie.
  2. Spoon about 1 tablespoon of the cheesecake filling into the center of each cookie dough ball, gently pressing it into the indentation.
  3. Bake the cookies at 350°F (175°C) for 10-12 minutes or until the edges of the cookies are set but the centers are still soft.
  4. Let the cookies cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.

4. Top the Cookies:

  1. Once the cookies are cool, garnish with sliced fresh strawberries and additional mini chocolate chips or a drizzle of melted white chocolate for extra flavor and decoration.

Tips & Variations:

  • For extra texture: Add crushed graham crackers or a sprinkle of cinnamon to the cheesecake filling to mimic the crust of a traditional cheesecake.
  • Storage: Store the cookies in an airtight container at room temperature for up to 3 days, or refrigerate them for up to a week for the cheesecake filling to stay fresh.
  • Make it your own: You can swap the freeze-dried strawberries with other fruit flavors like raspberries or blueberries for a different twist!

These Crumbl Chocolate Strawberry Cheesecake Cookies are rich, creamy, and full of delicious layers—perfect for anyone who loves chocolate, cheesecake, and fresh strawberries! Would you like any other customizations for these cookies?
