- 5 tbsp (70g) unsalted butter, melted
- 2 tbsp granulated sugar
For the Cheesecake Filling:
- 3 (8 oz each) packages cream cheese, softened
- 1 cup (200g) granulated sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1 cup (240ml) sour cream
- ½ cup (120ml) heavy cream
- ½ tsp almond extract (optional)
For the Unicorn Fudge Swirl:
- 1 cup (240ml) sweetened condensed milk
- 1 ½ cups (250g) white chocolate chips
- ½ tsp vanilla extract
- Gel food coloring (pink, purple, blue, and yellow)
Instructions
Step 1: Prepare the Crust
- Preheat your oven to 325°F (165°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
- In a medium bowl, mix graham cracker crumbs, melted butter, and sugar until fully combined.
- Press the mixture evenly into the bottom of the prepared pan to form a solid crust.
- Bake for 8–10 minutes, or until golden. Remove from the oven and let cool while preparing the cheesecake filling.
Step 2: Make the Cheesecake Filling
- In a large mixing bowl, beat the cream cheese and sugar with an electric mixer on medium speed until smooth and creamy.
- Add vanilla extract and almond extract (if using), mixing until combined.
- Add the eggs one at a time, mixing on low speed after each addition.
- Stir in sour cream and heavy cream, beating until smooth.
- Pour the cheesecake batter over the cooled crust, smoothing the top with a spatula.
Step 3: Make the Unicorn Fudge Swirl
- In a microwave-safe bowl, melt the white chocolate chips and sweetened condensed milk in 30-second intervals, stirring between each, until smooth and fully melted.
- Stir in vanilla extract to the melted fudge mixture.
- Divide the fudge into separate bowls (about 4), and add a few drops of each gel food coloring to create pink, purple, blue, and yellow fudge. Stir each bowl gently to mix the colors.
- Drop spoonfuls of each colored fudge over the top of the cheesecake batter in a random pattern.
- Use a skewer or knife to swirl the fudge into the cheesecake to create a marble effect. Be careful not to mix the colors too much, as you want to maintain the rainbow look.
Step 4: Bake the Cheesecake
- Bake for 55–65 minutes, or until the edges are set and the center is slightly jiggly.
- Turn off the oven, crack the oven door, and let the cheesecake cool inside for 1 hour.
- After cooling, transfer the cheesecake to the refrigerator and chill for at least 4 hours, or overnight for best results.
Step 5: Decorate and Serve
- Once the cheesecake is chilled, remove it from the springform pan and transfer it to a serving platter.
- Optional: Top with whipped cream, rainbow sprinkles, or edible glitter for extra sparkle.
- Slice and serve this magical cheesecake that’s sure to impress everyone with its fun colors and creamy texture!
Tips for Success:
- Fudge Consistency: If the fudge is too thick to swirl easily, add a tiny bit more condensed milk to loosen it up.
- Gel Food Coloring: Use gel food coloring for vibrant and non-diluted colors that will maintain their intensity.
- Swirl Technique: Be gentle when swirling the fudge into the batter to maintain the defined layers.
