  • 5 tbsp (70g) unsalted butter, melted
  • 2 tbsp granulated sugar

For the Cheesecake Filling:

  • 3 (8 oz each) packages cream cheese, softened
  • 1 cup (200g) granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup (240ml) sour cream
  • ½ cup (120ml) heavy cream
  • ½ tsp almond extract (optional)

For the Unicorn Fudge Swirl:

  • 1 cup (240ml) sweetened condensed milk
  • 1 ½ cups (250g) white chocolate chips
  • ½ tsp vanilla extract
  • Gel food coloring (pink, purple, blue, and yellow)

Instructions

Step 1: Prepare the Crust

  1. Preheat your oven to 325°F (165°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. In a medium bowl, mix graham cracker crumbs, melted butter, and sugar until fully combined.
  3. Press the mixture evenly into the bottom of the prepared pan to form a solid crust.
  4. Bake for 8–10 minutes, or until golden. Remove from the oven and let cool while preparing the cheesecake filling.

Step 2: Make the Cheesecake Filling

  1. In a large mixing bowl, beat the cream cheese and sugar with an electric mixer on medium speed until smooth and creamy.
  2. Add vanilla extract and almond extract (if using), mixing until combined.
  3. Add the eggs one at a time, mixing on low speed after each addition.
  4. Stir in sour cream and heavy cream, beating until smooth.
  5. Pour the cheesecake batter over the cooled crust, smoothing the top with a spatula.

Step 3: Make the Unicorn Fudge Swirl

  1. In a microwave-safe bowl, melt the white chocolate chips and sweetened condensed milk in 30-second intervals, stirring between each, until smooth and fully melted.
  2. Stir in vanilla extract to the melted fudge mixture.
  3. Divide the fudge into separate bowls (about 4), and add a few drops of each gel food coloring to create pink, purple, blue, and yellow fudge. Stir each bowl gently to mix the colors.
  4. Drop spoonfuls of each colored fudge over the top of the cheesecake batter in a random pattern.
  5. Use a skewer or knife to swirl the fudge into the cheesecake to create a marble effect. Be careful not to mix the colors too much, as you want to maintain the rainbow look.

Step 4: Bake the Cheesecake

  1. Bake for 55–65 minutes, or until the edges are set and the center is slightly jiggly.
  2. Turn off the oven, crack the oven door, and let the cheesecake cool inside for 1 hour.
  3. After cooling, transfer the cheesecake to the refrigerator and chill for at least 4 hours, or overnight for best results.

Step 5: Decorate and Serve

  1. Once the cheesecake is chilled, remove it from the springform pan and transfer it to a serving platter.
  2. Optional: Top with whipped cream, rainbow sprinkles, or edible glitter for extra sparkle.
  3. Slice and serve this magical cheesecake that’s sure to impress everyone with its fun colors and creamy texture!

Tips for Success:

  • Fudge Consistency: If the fudge is too thick to swirl easily, add a tiny bit more condensed milk to loosen it up.
  • Gel Food Coloring: Use gel food coloring for vibrant and non-diluted colors that will maintain their intensity.
  • Swirl Technique: Be gentle when swirling the fudge into the batter to maintain the defined layers.

This Unicorn Fudge Cheesecake is a colorful, decadent dessert that will add magic to any occasion!  Would you like a suggestion for mini versions or other flavor twists for a personalized touch?
