Ultimate Peanut Butter Chocolate Bliss Cake
Ingredients:
For the Chocolate Cake:
- 1 3/4 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water
For the Peanut Butter Filling:
- 1 cup creamy peanut butter (smooth)
- 1/2 cup unsalted butter, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 2 tbsp heavy cream (or milk)
For the Chocolate Ganache:
- 8 oz semi-sweet or bittersweet chocolate (chopped)
- 1/2 cup heavy cream
- 1 tbsp unsalted butter (optional, for extra shine)
For the Garnish:
- Chopped peanuts (optional)
- Chocolate shavings or cocoa powder (optional)
Instructions:
- Make the Chocolate Cake:
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the eggs, milk, vegetable oil, and vanilla extract. Mix until smooth and well combined.
- Gradually pour in the boiling water while mixing. The batter will be thin, but that’s okay.
- Divide the batter evenly between the two prepared cake pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
- Make the Peanut Butter Filling:
- In a large bowl, beat the peanut butter and softened butter together until smooth and creamy.
- Gradually add the powdered sugar, vanilla extract, and heavy cream, and continue to mix until the filling is light and fluffy.
- If the filling is too thick, add a little more cream to reach your desired consistency.
- Make the Chocolate Ganache:
- Place the chopped chocolate in a heatproof bowl.
- In a small saucepan, heat the heavy cream over medium heat until it begins to simmer (do not boil).
- Pour the hot cream over the chopped chocolate and let it sit for 2-3 minutes to soften the chocolate.
- Stir gently until the ganache is smooth and glossy. If desired, stir in the butter for extra shine.
- Assemble the Cake:
- Once the cakes are completely cool, place one layer on a serving platter.
- Spread the peanut butter filling evenly over the top of the first cake layer.
- Place the second cake layer on top, pressing it down gently.
- Pour the chocolate ganache over the top of the cake, allowing it to drip down the sides.
- Use a spatula to smooth the ganache over the cake if needed.
- Garnish and Serve:
- Optional: Sprinkle chopped peanuts on top for crunch, and garnish with chocolate shavings or a dusting of cocoa powder.
- Slice and enjoy the Ultimate Peanut Butter Chocolate Bliss Cake!
Tips:
- Make Ahead: This cake can be made in advance and stored in the fridge for a couple of days. The flavors will continue to meld and deepen.
- Extra Filling: If you love peanut butter, feel free to add an extra layer of peanut butter filling between the cake layers for even more decadence.
- Chocolate Options: You can use milk chocolate or dark chocolate for the ganache, depending on your preference for sweetness.
This Ultimate Peanut Butter Chocolate Bliss Cake is the ultimate indulgence for any chocolate and peanut butter lover, offering a rich combination of flavors and textures that will have everyone coming back for more!
