Ingredients:
- 1 pre-made pie crust (or homemade if you prefer)
- 300g (10 oz) smoked or fresh salmon, skin removed and flaked
- 1 cup fresh spinach, chopped (or frozen spinach, well-drained)
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 cup heavy cream (or half-and-half for a lighter version)
- 4 large eggs
- 1 cup grated cheese (Gruyère, cheddar, or a mix of both)
- 1 tablespoon olive oil (or butter)
- Salt and pepper, to taste
- Pinch of nutmeg (optional)
- Fresh dill (for garnish)
Instructions:
- Preheat the Oven:
- Preheat your oven to 375°F (190°C).
- Prepare the Crust:
- If using a pre-made pie crust, simply place it in your quiche dish and set it aside. If you’re making your own, roll it out and fit it into the dish.
- Optionally, blind-bake the crust for 10 minutes at 375°F to prevent sogginess.
- Cook the Spinach:
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the garlic and cook for another minute until fragrant.
- Stir in the spinach and cook until wilted. Remove from heat and let it cool slightly.
- Prepare the Custard:
- In a large bowl, whisk together the eggs, heavy cream, salt, pepper, and a pinch of nutmeg (if using). Stir in the grated cheese.
- Assemble the Quiche:
- Spread the cooked spinach and onion mixture evenly across the bottom of the pie crust.
- Flake the salmon and scatter it on top of the spinach.
- Pour the egg and cream mixture over the top, making sure it’s evenly distributed.
- Bake:
- Bake the quiche in the preheated oven for 35-40 minutes, or until the custard is set and the top is golden brown. You can check by inserting a knife in the center — it should come out clean.
- Cool and Serve:
- Let the quiche cool for 5-10 minutes before slicing. This allows the filling to set and makes it easier to cut.
- Garnish with fresh dill or a sprinkle of extra cheese if desired.
