Raspberry Rose Mousse

This elegant and airy dessert combines the tart sweetness of raspberries with the delicate floral aroma of rose. Perfect for romantic dinners or special occasions!


Ingredients:

For the Raspberry Puree:

  • 2 cups (250g) fresh or frozen raspberries
  • ¼ cup (50g) granulated sugar
  • 1 tbsp lemon juice

For the Mousse:

  • 1 ½ cups (360ml) heavy whipping cream, chilled
  • 2 tbsp powdered sugar
  • 1 tsp rose water (adjust to taste)
  • 1 ½ tsp unflavored gelatin
  • 2 tbsp cold water

Optional Garnishes:

  • Fresh raspberries
  • Edible rose petals
  • White chocolate curls

Instructions:

Step 1: Make the Raspberry Puree

  1. In a small saucepan, combine raspberries, sugar, and lemon juice. Cook over medium heat, stirring, until the raspberries break down and the mixture thickens slightly (about 5 minutes).
  2. Strain the mixture through a fine mesh sieve to remove seeds. Let the puree cool to room temperature.

Step 2: Bloom the Gelatin

  1. In a small bowl, sprinkle gelatin over cold water and let it sit for 5 minutes to bloom.
  2. Gently heat the bloomed gelatin in the microwave (10-15 seconds) or over a double boiler until completely dissolved.

Step 3: Whip the Cream

  1. In a chilled bowl, beat heavy whipping cream and powdered sugar until soft peaks form.
  2. Add the rose water and continue beating until stiff peaks form. Be careful not to overbeat.

Step 4: Combine the Raspberry and Gelatin Mixture

  1. Stir the dissolved gelatin into the cooled raspberry puree. Mix thoroughly.
  2. Gently fold 1/3 of the whipped cream into the raspberry mixture to lighten it. Then fold in the remaining whipped cream until fully combined.

Step 5: Chill the Mousse

  1. Divide the mousse into serving glasses or bowls.
  2. Refrigerate for at least 2-3 hours, or until set.

Step 6: Garnish and Serve

  1. Just before serving, garnish with fresh raspberries, edible rose petals, and white chocolate curls for an elegant touch.

Tips:

  • Adjust the amount of rose water to suit your taste; a little goes a long way!
  • For a smoother mousse, strain the raspberry puree thoroughly.
  • Pair with buttery shortbread cookies for added texture.
