Ingredients:

For the Cake:

  • 1 ½ cups (190g) all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 cup (240ml) whole milk
  • ½ cup (115g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • ½ tsp almond extract (optional)

For the Praline Topping:

  • 1 cup (200g) packed brown sugar
  • 1/2 cup (115g) unsalted butter
  • ¼ cup (60ml) heavy cream
  • 1 ½ cups (150g) chopped pecans (or walnuts)
  • ½ tsp vanilla extract
  • Pinch of salt

Instructions:

Step 1: Make the Cake

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch (23 cm) round cake pan, or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and almond extract (if using).
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  6. Pour the batter into the prepared cake pan and spread evenly.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely in the pan.

  1. In a medium saucepan, combine the brown sugar, butter, and heavy cream over medium heat. Stir until the butter is melted and the sugar dissolves.

  3. Stir in the chopped pecans (or walnuts), vanilla extract, and salt. Continue to cook for another 1-2 minutes until the nuts are well coated.

  1. Once the cake has cooled, place it on a serving plate.
  2. Pour the warm praline topping over the cake, spreading it out evenly.
  3. Allow the topping to set and firm up slightly before serving, but keep the topping soft and gooey.
