Ingredients:
For the Cake:
- 1 ½ cups (190g) all-purpose flour
- 1 tsp baking powder
- ¼ tsp salt
- 1 cup (240ml) whole milk
- ½ cup (115g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- ½ tsp almond extract (optional)
For the Praline Topping:
- 1 cup (200g) packed brown sugar
- 1/2 cup (115g) unsalted butter
- ¼ cup (60ml) heavy cream
- 1 ½ cups (150g) chopped pecans (or walnuts)
- ½ tsp vanilla extract
- Pinch of salt
Instructions:
Step 1: Make the Cake
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch (23 cm) round cake pan, or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and almond extract (if using).
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
- Pour the batter into the prepared cake pan and spread evenly.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely in the pan.
Step 2: Make the Praline Topping
- In a medium saucepan, combine the brown sugar, butter, and heavy cream over medium heat. Stir until the butter is melted and the sugar dissolves.
- Bring the mixture to a simmer and cook for 3-4 minutes, stirring constantly, until it thickens slightly.
- Stir in the chopped pecans (or walnuts), vanilla extract, and salt. Continue to cook for another 1-2 minutes until the nuts are well coated.
- Remove from heat and let the praline topping cool for a few minutes, but do not allow it to set completely.
Step 3: Assemble the Cake
- Once the cake has cooled, place it on a serving plate.
- Pour the warm praline topping over the cake, spreading it out evenly.
- Allow the topping to set and firm up slightly before serving, but keep the topping soft and gooey.
