- 1 cup crushed pineapple , drained (reserve juice for later)
- 1/4 cup pineapple juice (from the reserved can of pineapple)
- 1/2 cup buttermilk (or substitute with regular milk mixed with 1 teaspoon of lemon juice or vinegar)
For the Pineapple Syrup (Optional):
- 1/4 cup pineapple juice
- 2 tablespoons sugar
For the Whipped Cream Frosting:
- 1 1/2 cups heavy whipping cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
For Garnish:
- Fresh pineapple slices or pineapple chunks
- Shredded coconut (optional)
- Maraschino cherries (optional)
Instructions :
1. Preheat the Oven :
- Preheat your oven to 350°F (175°C) . Grease and flour a 9-inch round cake pan (or two 8-inch pans if you prefer a layered cake).
2. Prepare the Cake Batter :
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, beat the softened butter and sugar together using a hand mixer or stand mixer until light and fluffy, about 3-4 minutes.
- Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
