These Homemade Cherry Mash Bars are a decadent treat that combines creamy, rich chocolate with the tangy sweetness of cherries and a marshmallow center. Inspired by the popular Cherry Mash candy bar, these bars are an easy way to indulge in this delicious flavor combination at home.
Ingredients
For the Cherry Layer:
- 1 ½ cups (150g) maraschino cherries, drained and chopped (reserve 2 tbsp cherry juice)
- 1 cup (100g) powdered sugar
- 1 cup (120g) crispy rice cereal (like Rice Krispies)
- ½ cup (115g) creamy peanut butter
- 1 tsp vanilla extract
- 2 tbsp cherry juice (reserved from cherries)
For the Chocolate Coating:
- 8 oz (225g) semi-sweet chocolate chips or chopped chocolate
- 2 tbsp unsalted butter
- 2 tbsp heavy cream (optional, for extra smoothness)
Instructions
Step 1: Prepare the Cherry Layer
- In a large mixing bowl, combine the chopped maraschino cherries, powdered sugar, and peanut butter. Stir until the mixture is smooth and thick.
- Add the crispy rice cereal and vanilla extract, mixing gently until the cereal is evenly coated.
- Gradually stir in the reserved cherry juice to bring the mixture together, making sure it’s sticky but not too wet.
- Press the cherry mixture into a greased 9×9-inch baking pan (or line the pan with parchment paper for easy removal). Use a spatula or your hands to evenly spread the mixture into the pan. Chill in the refrigerator for at least 30 minutes to set.
Step 2: Prepare the Chocolate Coating
- In a heatproof bowl, melt the chocolate chips, butter, and heavy cream together. You can do this using a microwave in 30-second intervals, stirring in between, or using a double boiler.
- Stir the chocolate mixture until smooth and fully melted.
Step 3: Assemble the Cherry Mash Bars
- Once the cherry layer has set, pour the melted chocolate over the top, spreading it evenly to cover the entire surface.
- Return the bars to the refrigerator for about 1 hour, or until the chocolate is firm and set.
- Once set, cut the bars into squares or rectangles. Store them in an airtight container at room temperature or in the fridge, depending on your preference for chocolate firmness.
Tips for Success:
- Cherry Variations: If you want to experiment with flavors, you can try using fresh or frozen cherries instead of maraschino cherries, though maraschino cherries give a sweeter, more authentic Cherry Mash flavor.
- Crispy Cereal: Make sure to use crisp rice cereal for the right texture. You can also use cornflakes for a different crunch.
- Peanut Butter: For a richer flavor, you can use creamy peanut butter, but chunky peanut butter can give a nice texture to the bars.
- Storage: These bars will last for up to a week at room temperature, or up to 2 weeks in the fridge. You can freeze them for up to a month as well.
