  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup unsalted butter , melted
  • 1 teaspoon vanilla extract

For the Cheesecake Filling:

  • 8 oz cream cheese , softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup heavy cream

For the Peach Topping:

  • 2 ripe peaches , peeled, pitted, and diced (or use canned peaches, drained)
  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon butter

For the Cobbler Topping:

  • 1/2 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter , cold and cubed
  • 2 tablespoons rolled oats (optional for extra texture)
  • 1 tablespoon milk (for drizzling)

Instructions :

1. Make the Donut Batter :

  • Preheat your oven to 350°F (175°C) and lightly grease a donut pan.
  • In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
  • In a separate bowl, whisk together the eggs, milk, melted butter, and vanilla extract until well combined.
  • Gradually fold the wet ingredients into the dry ingredients, stirring until just combined. The batter should be thick and slightly fluffy.
  • Spoon the donut batter into the donut pan, filling each well about 3/4 of the way.

2. Bake the Donuts :

  • Bake the donuts in the preheated oven for about 10-12 minutes , or until a toothpick inserted into the center comes out clean and the donuts are golden brown.
  • Allow the donuts to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

3. Prepare the Cheesecake Filling :

  • While the donuts are cooling, make the cheesecake filling. In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract together until smooth.
  • Gradually add the heavy cream and continue beating until the mixture becomes creamy and thick, resembling the texture of cheesecake filling.
  • Transfer the filling to a piping bag or a plastic sandwich bag with the tip cut off for easy filling.

4. Prepare the Peach Topping :

  • In a small skillet, melt the butter over medium heat. Add the diced peaches, sugar, lemon juice, and cinnamon. Stir to coat the peaches evenly in the mixture.
  • Cook for about 3-4 minutes , until the peaches soften and release their juices, but still hold their shape. Set aside to cool slightly.

5. Make the Cobbler Topping :

  • In a small bowl, combine the flour, sugar, cinnamon, and salt.
  • Add the cold cubed butter and use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs.
  • Stir in the oats (if using).
  • Drizzle the milk over the mixture and gently stir until the topping becomes crumbly and slightly clumpy.

6. Assemble the Donuts :

  • Once the donuts have cooled, use a knife or a small spoon to make a small hole in the center of each donut.
  • Pipe the cheesecake filling into the center of each donut.
  • Top the filled donuts with the peach mixture, spooning a bit of the caramelized peach mixture onto each donut.
  • Sprinkle the cobbler topping over the peaches, making sure to cover each donut generously with the crumbly topping.
