Beetroot, Goat Cheese, and Honey Canapés are a delightful bite-sized appetizer, combining the earthy flavor of beetroot, the creamy tang of goat cheese, and the sweetness of honey. The result is a perfect balance of flavors that are both sophisticated and easy to prepare, making them ideal for any occasion.

Ingredients:

  • 1 small beetroot (or 2-3 pre-cooked beets)
  • 1/2 cup goat cheese, softened
  • 2 tablespoons honey (preferably raw or floral honey)
  • 1 tablespoon fresh thyme leaves (or rosemary for variation)
  • 1 tablespoon olive oil
  • Freshly ground black pepper, to taste
  • 1 small baguette (or crackers, or crostini)
  • Microgreens or arugula for garnish (optional)

Instructions:

  1. Prepare the Beetroot:
    • If using fresh beetroot, peel and cook it by roasting or boiling until tender. To roast, wrap the beetroot in foil and bake at 375°F (190°C) for about 45-60 minutes. Alternatively, boil the beetroot for 20-30 minutes until soft. Once cooked, allow to cool and slice into thin rounds.
    • If using pre-cooked beets, simply slice them into thin rounds.
  2. Prepare the Goat Cheese Spread:
    • In a small bowl, mix the softened goat cheese with honey, olive oil, salt, and freshly ground black pepper. Stir until smooth and creamy.
  3. Toast the Baguette or Crostini:
    • Slice the baguette into 1/2-inch rounds and toast in the oven at 375°F (190°C) for about 5-7 minutes, or until golden and crisp. Alternatively, use store-bought crackers or pre-made crostini.
  4. Assemble the Canapés:
    • Spread a layer of goat cheese mixture on each slice of toasted baguette or crostini.
    • Place a slice of beetroot on top.
    • Drizzle with a small amount of honey for a sweet contrast.
    • Sprinkle fresh thyme leaves or rosemary on top for an aromatic touch.
  5. Garnish and Serve:
    • Garnish with microgreens or arugula for added color and freshness.
    • Serve immediately, or refrigerate for up to 30 minutes before serving.

Tips:

  • Nuts: Add a sprinkle of toasted nuts like walnuts or pecans for crunch and extra flavor.
  • Flavor Variations: You can also add a dash of balsamic glaze or a sprinkle of crumbled feta for more complexity.
  • Gluten-Free Option: Use gluten-free crackers or rice cakes as the base.

These Beetroot, Goat Cheese, and Honey Canapés are the perfect blend of earthy, creamy, and sweet flavors, making them a great addition to any appetizer spread!
