Strawberry cheesecake is a timeless favorite! Here’s a simple yet indulgent recipe for Strawberry Cheesecake with a Graham Cracker Crust:
Ingredients
Crust:
- 2 cups (200g) graham cracker crumbs
- 1/4 cup (50g) granulated sugar
- 1/2 cup (115g) unsalted butter, melted
Cheesecake Filling:
- 24 oz (680g) cream cheese, softened
- 1 cup (200g) granulated sugar
- 1 tsp vanilla extract
- 1/4 cup (60ml) sour cream
- 3 large eggs
Strawberry Topping:
- 2 cups (300g) fresh strawberries, hulled and sliced
- 1/4 cup (50g) granulated sugar
- 1 tbsp cornstarch
- 2 tbsp water
- 1 tsp lemon juice
Instructions
1. Prepare the Crust:
- Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
- Combine graham cracker crumbs, sugar, and melted butter in a bowl until evenly mixed.
- Press the mixture into the bottom of the pan and about an inch up the sides.
- Bake for 8-10 minutes, then let it cool completely.
2. Make the Cheesecake Filling:
- In a large bowl, beat softened cream cheese and sugar until smooth and creamy. Add vanilla extract and sour cream, mixing until combined.
- Beat in eggs one at a time on low speed, just until incorporated. Avoid overmixing.
- Pour the filling over the cooled crust and smooth the top.
3. Bake the Cheesecake:
- Place the springform pan in a water bath (wrap the bottom of the pan in foil to prevent leaks).
- Bake for 50-60 minutes, or until the edges are set, but the center is slightly jiggly.
- Turn off the oven and leave the cheesecake inside with the door cracked open for 1 hour.
- Cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
4. Prepare the Strawberry Topping:
- Combine sliced strawberries, sugar, cornstarch, water, and lemon juice in a saucepan over medium heat. Cook until the mixture thickens and becomes syrupy, about 5-7 minutes. Let it cool completely.
5. Assemble and Serve:
- Spread the cooled strawberry topping over the chilled cheesecake.
- Slice and serve for a luscious dessert!
