Ingredients

Crust:

  • 2 cups (200g) graham cracker crumbs
  • 1/4 cup (50g) granulated sugar
  • 1/2 cup (115g) unsalted butter, melted

Cheesecake Filling:

  • 24 oz (680g) cream cheese, softened
  • 1 cup (200g) granulated sugar
  • 1 tsp vanilla extract
  • 1/4 cup (60ml) sour cream
  • 3 large eggs

Strawberry Topping:

  • 2 cups (300g) fresh strawberries, hulled and sliced
  • 1/4 cup (50g) granulated sugar
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 1 tsp lemon juice

Instructions

1. Prepare the Crust:

  • Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
  • Combine graham cracker crumbs, sugar, and melted butter in a bowl until evenly mixed.
  • Press the mixture into the bottom of the pan and about an inch up the sides.
  • Bake for 8-10 minutes, then let it cool completely.

2. Make the Cheesecake Filling:

  • In a large bowl, beat softened cream cheese and sugar until smooth and creamy. Add vanilla extract and sour cream, mixing until combined.
  • Beat in eggs one at a time on low speed, just until incorporated. Avoid overmixing.
  • Pour the filling over the cooled crust and smooth the top.

3. Bake the Cheesecake:

  • Place the springform pan in a water bath (wrap the bottom of the pan in foil to prevent leaks).
  • Bake for 50-60 minutes, or until the edges are set, but the center is slightly jiggly.
  • Turn off the oven and leave the cheesecake inside with the door cracked open for 1 hour.
  • Cool completely at room temperature, then refrigerate for at least 4 hours or overnight.

4. Prepare the Strawberry Topping:

  • Combine sliced strawberries, sugar, cornstarch, water, and lemon juice in a saucepan over medium heat. Cook until the mixture thickens and becomes syrupy, about 5-7 minutes. Let it cool completely.

5. Assemble and Serve:

  • Spread the cooled strawberry topping over the chilled cheesecake.
  • Slice and serve for a luscious dessert!
