These delicate, buttery cookies are perfect for the holidays. With a melt-in-your-mouth texture and a rich flavor, they’re irresistible and easy to make! These logs are slightly different from the typical melting moment because of their shape, making them even more festive.

Ingredients

  • 1 cup unsalted butter, softened
  • ⅓ cup powdered sugar
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • ½ cup cornstarch
  • **Pinch of salt
  • ½ cup raspberry jam (or any jam of your choice)
  • 1 tablespoon powdered sugar (for dusting, optional)

Instructions

  1. Prepare the Oven and Baking Sheets:
    • Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Mix the Dough:
    • In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
    • Add the vanilla extract and mix to combine.
    • Sift the flour, cornstarch, and salt into the bowl, and stir until just combined. The dough should be soft and slightly crumbly but will come together when pressed.
  3. Shape the Logs:
    • Divide the dough into small portions and roll each into a log about 2-3 inches long. Place the logs on the prepared baking sheets, leaving space between them.
  4. Bake:
    • Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Be careful not to overbake them—they should remain pale in color.
    • Once baked, let the logs cool completely on a wire rack.
  5. Assemble the Cookies:
    • Once the logs are cool, spread a small amount of raspberry jam (or your chosen jam) in the center of one log.
    • Gently press another log on top to form a sandwich, with the jam in the middle.
    • If desired, lightly dust the tops of the cookies with powdered sugar for a festive touch.

Tips:

  • Jam Variations: You can use any jam or jelly you prefer, like strawberry, apricot, or blackberry.
  • Chill the Dough: If the dough is too soft to shape, chill it in the refrigerator for about 30 minutes before forming the logs.
  • Make Ahead: These cookies store well for a few days in an airtight container and even get better as they sit, allowing the jam to soften the cookies.

🎄 Enjoy your Melting Moment Logs! These little treats are sure to melt in your mouth and brighten up any holiday table!
