Layered Brigadeiro Bliss Cake is an irresistible, decadent dessert that combines the rich flavors of Brazilian brigadeiro with layers of soft cake. This indulgent treat is perfect for anyone who loves chocolate and creamy sweetness. Here’s a recipe to create this show-stopping cake:

Ingredients:

For the Chocolate Cake:

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water

For the Brigadeiro Filling:

  • 1 can (14 oz) sweetened condensed milk
  • 2 tbsp unsweetened cocoa powder
  • 2 tbsp butter
  • 1/4 cup whole milk
  • 1/2 tsp vanilla extract
  • A pinch of salt

For the Brigadeiro Frosting:

  • 1 can (14 oz) sweetened condensed milk
  • 1 tbsp butter
  • 1/4 cup cocoa powder
  • 1/4 cup heavy cream
  • 1/2 tsp vanilla extract

For Garnish:

  • Chocolate sprinkles or cocoa powder
  • Crushed nuts (optional)

Instructions:

1. Prepare the Chocolate Cake:

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • Add the eggs, milk, oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes until smooth.
  • Stir in the boiling water. The batter will be thin, but that’s normal.
  • Divide the batter evenly between the two prepared pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

2. Make the Brigadeiro Filling:

  • In a saucepan, combine the sweetened condensed milk, cocoa powder, butter, whole milk, and a pinch of salt over medium heat.
  • Stir constantly until the mixture begins to thicken and pulls away from the sides of the pan, about 8-10 minutes.
  • Remove from heat and stir in the vanilla extract. Let it cool to room temperature.

3. Prepare the Brigadeiro Frosting:

  • In a saucepan, combine the sweetened condensed milk, butter, cocoa powder, and heavy cream over medium heat.
  • Stir constantly and cook for about 10 minutes until the frosting thickens and begins to pull away from the sides of the pan.
  • Remove from heat and stir in the vanilla extract. Let it cool to room temperature until it reaches a spreadable consistency.

4. Assemble the Cake:

  • Once the cakes are completely cooled, slice each cake in half horizontally to create four layers.
  • Place the first layer of cake on a serving platter and spread a generous amount of the brigadeiro filling over it.
  • Add the second layer of cake and repeat the filling. Continue layering with the remaining cake layers and brigadeiro filling.
  • Once the layers are stacked, spread the brigadeiro frosting over the top and sides of the cake.

5. Garnish and Serve:

  • Decorate the cake with chocolate sprinkles or cocoa powder for a traditional Brazilian touch.
  • Optionally, you can sprinkle crushed nuts, such as pecans or hazelnuts, on top for added texture and flavor.

Tips:

  • If you want the cake to be extra indulgent, you can drizzle extra brigadeiro filling on top or between the layers for more gooey goodness.
  • You can also refrigerate the cake to allow the frosting to firm up a bit before serving.

This Layered Brigadeiro Bliss Cake is perfect for special occasions, celebrations, or any time you want to indulge in a rich, chocolatey dessert with a creamy, sweet twist!
