Ingredients:
For the White Cake:
- 2 1/2 cups all-purpose flour
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup unsalted butter (softened)
- 1 1/2 cups granulated sugar
- 4 large eggs (room temperature)
- 1 tbsp vanilla extract
- 1 cup whole milk (room temperature)
- 1/2 cup coconut milk (for a hint of coconut flavor)
For the German Chocolate Frosting:
- 1 1/2 cups sweetened shredded coconut
- 1 cup chopped pecans (or walnuts, optional)
- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 1 cup evaporated milk
- 3 large egg yolks (beaten)
- 1 tsp vanilla extract
- 4 oz German chocolate (chopped or use German chocolate baking bar)
For the Garnish:
- Extra shredded coconut (to sprinkle on top)
- Optional: additional chopped pecans for garnish
Instructions:
1. Prepare the White Cake:
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a medium bowl, sift together the flour, baking powder, and salt. Set aside.
- In a large mixing bowl, beat the softened butter and sugar together until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
- Alternate adding the dry ingredients and the milk (and coconut milk), starting and ending with the dry ingredients. Mix until just combined.
- Pour the batter evenly into the prepared cake pans.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
2. Make the German Chocolate Frosting:
- In a saucepan, melt the butter over medium heat. Add the sugar, evaporated milk, and egg yolks, stirring constantly.
- Cook the mixture, whisking frequently, for about 5-7 minutes until it thickens to a custard-like consistency.
- Remove from heat and stir in the vanilla extract and chopped German chocolate. Continue stirring until the chocolate melts completely and the frosting becomes smooth.
- Fold in the shredded coconut and chopped pecans (if using).
- Allow the frosting to cool to room temperature before spreading on the cake.
3. Assemble the Cake:
- Once the cakes are completely cooled, place one layer on a serving plate.
- Spread a generous amount of the German chocolate frosting over the top of the first layer.
- Place the second cake layer on top and frost the top and sides with the remaining frosting.
4. Garnish & Serve:
- Sprinkle extra shredded coconut on top of the cake for a beautiful finish.
- Optionally, garnish with additional chopped pecans for extra crunch.
- Slice and enjoy this Heavenly White German Chocolate Cake, perfect for any celebration or indulgent treat!
This cake combines the richness of the German chocolate frosting with the light and airy texture of a white cake, creating a truly heavenly dessert experience. Enjoy!
