The Galette des Rois is a traditional French dessert celebrating Epiphany, and this express version simplifies the process while keeping it delicious and festive!
Ingredients
- 2 sheets of puff pastry
- 1 cup (100g) almond flour
- 1/2 cup (100g) granulated sugar
- 1/4 cup (60g) unsalted butter, softened
- 2 large eggs (1 for the filling, 1 for the egg wash)
- 1 tsp almond extract (or vanilla extract)
- 1 small figurine or dried bean (the “fève”)
Instructions
1. Prepare the Almond Cream Filling:
- In a bowl, cream together the almond flour, sugar, and softened butter until smooth.
- Add 1 egg and almond extract, mixing until well combined.
2. Assemble the Galette:
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Roll out one sheet of puff pastry onto the prepared baking sheet. Spread the almond cream filling evenly over the pastry, leaving a 1-inch border around the edges.
- Hide the fève (figurine or bean) in the filling.
- Place the second sheet of puff pastry on top. Press the edges together to seal, then crimp them decoratively with a fork or your fingers.
3. Decorate and Glaze:
- Beat the remaining egg and brush it over the top for a golden finish.
- Use the tip of a knife to gently score a pattern (like spirals or diamonds) on the surface without cutting through the pastry.
4. Bake:
- Bake in the preheated oven for 25-30 minutes, or until the galette is puffed and golden brown.
5. Serve:
- Let it cool slightly before serving. Tradition says the youngest person hides under the table to decide who gets each slice—and whoever finds the fève is crowned king or queen!
