Instructions
1. Make the Cranberry Jelly:

- Stir in the cornstarch slurry and cook for an additional 1-2 minutes until the jelly is thickened. Remove from heat and let cool completely.
2. Prepare the Chocolate:
- Melt the chocolate and coconut oil (if using) in a heatproof bowl set over a pot of simmering water, stirring until smooth. Alternatively, melt the chocolate in the microwave in 30-second intervals, stirring after each interval.
3. Assemble the Bites:
- Line a mini muffin tin or silicone mold with paper liners or grease lightly.
- Spoon 1 teaspoon of melted chocolate into the bottom of each cavity, tilting to coat the sides slightly.
- Chill the tray in the fridge for 5 minutes to set the chocolate.
- Add a small dollop (about 1/2 teaspoon) of cranberry jelly to the center of each chocolate shell.
- Cover the jelly with another teaspoon of melted chocolate, ensuring the jelly is fully sealed.
- Tap the tray gently on the counter to smooth the tops and remove air bubbles.
4. Chill and Serve:
- Refrigerate the bites for at least 20 minutes, or until fully set.
- Remove from the mold or muffin tin and peel off liners if used.
