Ingredients

Instructions

  2. Stir in the cornstarch slurry and cook for an additional 1-2 minutes until the jelly is thickened. Remove from heat and let cool completely.

2. Prepare the Chocolate:

  1. Melt the chocolate and coconut oil (if using) in a heatproof bowl set over a pot of simmering water, stirring until smooth. Alternatively, melt the chocolate in the microwave in 30-second intervals, stirring after each interval.

3. Assemble the Bites:

  1. Line a mini muffin tin or silicone mold with paper liners or grease lightly.
  2. Spoon 1 teaspoon of melted chocolate into the bottom of each cavity, tilting to coat the sides slightly.
  3. Chill the tray in the fridge for 5 minutes to set the chocolate.
  4. Add a small dollop (about 1/2 teaspoon) of cranberry jelly to the center of each chocolate shell.
  5. Cover the jelly with another teaspoon of melted chocolate, ensuring the jelly is fully sealed.

4. Chill and Serve:
